WThis is a simplified version of a drink featured on our latest menu. It's a batch prepared mix that's loaded with flavours of the Christmas time, making it excellent for your holiday party. Reserve the remaining cordial to use in morning drinks, sweets, or for another batch of this cocktail.
The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Drink (yields 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Place the listed items in a pan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Then, turn off the heat and leave to cool entirely. Pour into an clean bottle, seal keeping it in the refrigerator, it can be stored for about a month.
For the Premix: Combine all the liquid ingredients into a big jug, let it rest for 60 minutes, then pass it through best through a fine cloth, making it perfectly clear.
When ready to serve: Pour 85ml of your cocktail base into a cocktail shaker containing ice, and stir carefully for one minute to chill. Strain into a cold coupe glass or equivalent, garnish with some cranberries and complete it using a quick spritz of mandarin oil over the drink.
